THE LOWDOWN
Allister Barsby and Alice Bussi bring some serious chef credentials and impressive experience to the Kent food scene. Allister’s career has taken him from his native Whitstable to Read’s Restaurant, Gidleigh Park Hotel and as Senior Sous Chef at the Bath Priory supporting Sam Moody in achieving a Michelin star. At just 24 Allister was made Head Chef at Gidleigh Park (maintaining two Michelin stars and regaining five AA rosettes). Finally at Grove of Narbeth in Pembrokeshire he maintained three rosettes and opened another restaurant. In 2015 he was recognised as a future industry star with a Caterer Acorn Award.
Alice was born in Liguria, Italy and and trained at the renowned Stresa Hotel school on Lake Maggiore for five years. Her career has taken her across Europe to properties in St Moritz, Switzerland and Acchen in Germany. After gaining her AIS Sommelier Diploma she moved to the Bath Priory where she worked for four years as a Sommelier and then restaurant manager. Alice’s achievements also include launching Beach House restaurant in Wales (and winning AA Restaurant of the year) and in 2018 winning Food and Beverage Manager of the Year at the Hotel Catey Awards.
THE MENU
Every ingredient at Hide & Fox is carefully chosen for quality and seasonality. There are two creative tasting menus (choose from five or eight courses) and handpicked wine pairings. You are in for a serious treat here. Try turbot served with lobster raviolo, cantaloupe melon, lardo and bisque or orkney scallop, with apple ponzu, bergamot, wasabi and chilli. Meat lovers will enjoy the Kent marsh lamb served with roscoff onion, Provencal herbs and parmesan and there is a vegetarian tasting menu with equally amazing options (we love the sound of the salt baked beetroot, with goats cheese, pickled mushrooms and sorrels).
The carefully curated wine list includes a whole range of beautiful wines and a selection from the finest Kentish wine estates. We also love the signature cocktails here.
EVENTS
Look out for the Hide & Fox events (please click here for updated listings). Wine evenings are particularly popular and include a specially designed menu to showcase the wines on offer. Recent events have included Southern Italy and Rose wine dinners.
