THE LOWDOWN

At the heart of Kent’s fine dining scene, Hide & Fox holds the distinction of being the only two-star Michelin restaurant in Kent, and the only two-star venue in the South of England outside London. Founded by chefs Allister Barsby and Alice Bussi, the restaurant blends exceptional culinary expertise with a relaxed, modern dining experience.

Allister’s career has taken him from Whitstable to prestigious kitchens including Read’s Restaurant, Gidleigh Park Hotel and the Bath Priory, where he helped support a Michelin star win. By the age of 24, he became Head Chef at Gidleigh Park, helping maintain its two Michelin stars and five AA rosettes. Alice brings international experience, having trained in Italy and worked across Europe before building an award-winning hospitality career that includes launching Beach House in Wales and winning Food and Beverage Manager of the Year at the Hotel Catey Awards.

THE MENU

The menu celebrates seasonality, precision and creativity, with two tasting menus offering five or eight carefully crafted courses. Expect exceptional dishes showcasing outstanding ingredients, from turbot with lobster raviolo and bisque to Orkney scallop with apple ponzu, bergamot, wasabi and chilli. Meat lovers can enjoy Kent marsh lamb paired with Provençal herbs and parmesan, while the vegetarian tasting menu offers equally imaginative choices such as salt-baked beetroot with goat’s cheese, pickled mushrooms and sorrel.

The thoughtfully curated wine list features international selections alongside wines from some of Kent’s finest vineyards, complemented by signature cocktails designed to complete the dining experience.

EVENTS
